My husband LOVES Funfetti cake. Every birthday I try and get a little creative and make a new recipe using the Funfetti cake mix. We’ve tried Funfetti milkshakes, pancakes, rice crispies, and cookies!
Today I’d like to share my Funfetti cookie recipe, or what we now call Birthday Cake Cookies. They are so good and so easy to make! Did I mention they only have 3 ingredients? That’s my kind of recipe.
Birthday Cake Cookies
1 pkg. Funfetti Cake Mix
1 stick of butter, softened
Preheat oven to 375 degrees. Mix all ingredients together in a large bowl or standing mixer. The dough will be thick. Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheet. Bake for 6-8 minutes.
For the frosting, I’ve used store-bought frosting, and I’ve tried making my own. I prefer making my own, but if you don’t have the time, just buy some at the store.
1/2 cup butter, softened
3 – 3 1/2 cups powdered or confectioner’s sugar
1/4 tsp. salt
3 – 4 Tbsp. milk
1 tsp. vanilla
Cream butter until very fluffy. Add sugar, salt, and milk in small batches, alternately, beating until very fluffy. Stir in vanilla. Frost cookies, once they have cooled, and add your favorite sprinkles.
